Farmer John’s Stuffing Mixes

Every maritime family has its own recipe for the traditional holiday staples and ours is no exception. Our stuffing mix recipe comes from the outports of Newfoundland where my wife grew up and is her old family recipe. You will notice on the package that two stuffing recipes are given, one for bread and one for potato recipes half and half for a moister stuffing mix. Using just potatoes provides a gluten free stuffing mix and some of our customers really appreciate this. A real family favorite is the Bacon Wrap recipe I am including here. There are almost never any leftovers of these.

Our greatest surprise in creating these stuffing mixes has been the number of creative ways our customers use them. For example we have one restaurant which uses Savory Stuffing Mix as a soup base. They claim it’s the best tasting chicken soup stock they have ever used. Other people use our stuffing mixes in mash potatoes, meat loafs, roasts, gravy and rice. Please feel free to be creative and let us know if you have a really great
tasting recipe.

Mom’s Pan Fried Beef
This is an old Dutch method of frying steak… Place thawed beef steaks in frying pan and sear both sides of each steak at high temperature until almost black (or black). Then add tea kettle full of boiling water (about one liter) and mix in a package of Farmer John’s Stuffing Mix. Bring to a boil then reduce heat and cover. Allow it to simmer for about 25 minutes then serve. Gravy can be made using the remaining stock. Apple stuffing mix is my favorite for this.

Stuffing Mix Rice
When boiling rice add the package of Stuffing Mix directly into the rice and water mixture. All four flavors of Stuffing Mix taste great in rice.

Summer Savory Butter Corn
1 cup frozen sweet corn
1 tsp. Butter melted
¼ tsp. Summer Savory
Dash of salt and pepper
Cook corn as directed on package. Drain and place in sercing bowl. Stir in remaining ingredients. Serves 2. Enjoy!

Savory Beef Recipe
2 lbs beef
3 large onions, sliced
3 tbsp. Fat
3 tbsp. Flour
1 tsp. Summer savory
1 tsp. Salt
¼ tsp. Black pepper
2 cups beef stock
2 tbsp. Vinegar
1 tbsp. Ketchup

Directions:
Brown onions slowly in the fat. Increase the heat. Cut meat into desired sizes. Add to onions and brown. Mix the flour and other seasonings. Sprinkle over the meat. Add the beef stock, vinegar and ketchup. Cover and simmer until meat is tender, allowing at least two hours for shank or plate and 1 ½ hour for Rump or Round!

Savory & Onion Turkey Burgers
1 ¼ lbs ground chicken or turkey
2/3 cup of bread crumbs
½ cup finely chopped onion
1/3 cup finely chopped celery
1 egg white
1 tsp. Summer Savory
½ tsp. thyme
½ tsp. sage
½ tsp. salt
¼ tsp Black Pepper
6 hamburger buns

Directions:
In a large mixing bowl, mix together meat, bread crumbs, onion, celery, egg white, Summer Savory, sage, thyme, salt and pepper. Form into six large patties about ½ inch thick. Grill or broil the burgers until browned on both sides and white throughout.
Serve on buns with Cranberry-Orange Ketchup.
Orange Cranberry Ketchup
1/3 cup canned cranberry sauce
1/3 cup bottled chili sauce
1 tsp. Grated orange peel

Farmer John Bacon Wrap Recipe
1 Package of Stuffing Mix
1 lb of Bacon (Maple bacon is excellent)
½ Load of bread or 4 medium potatoes
Prepare stuffing mix as per instructions on package. Wrap ½ slice of bacon around a hand formed ball of stuffing mix. Place the bacon wraps in a pan and bake for 25 minutes at 250F. Serve warm and enjoy.

Stuffing Mix Meat Loaf
2 lbs lean ground beef (or pork)
1 package Stuffing Mix
¼ cup ketchup
Mix together, form into ball, place into greased pan, bake at 350F for 40 minutes or until done.

Summer Savory Soup
Ingredients:
1 Tbsp. Olive Oil
2 cups mixed vegetables (any type)
½ sweet onion, chopped
2 small cloves garlic, minced
1 package Farmer John’s Stuffing Mix (mix with 2 tsp butter and 1 cup water and microwave on high for 2 min. Then add 2 cups water)
¼ cup milk or half and half
1 Tbsp. Flour
½ Tsp. (or more to taste) each of the mince basil, oregano and summer savory.
¾ cup pasta (smaller pasta is best)
Heat oil in a medium sauce pan. Add garlic and onions and cook until onions are softened. Add any of the chunkier vegetables that will need extra cooking and cook for 5 minutes or so on low. Add the Stuffing Mix broth, and remaining vegetables. Bring to a boil. Add the pasta basil and oregano. Simmer for about 15 minutes.

Whisk the flour into milk. Reduce heat and stir in the flour mixture. Add the summer savory. Stir frequently while the soup thickens. Salt and Pepper to taste. Serves 4. Enjoy.
