It
seems only natural to combine our savory stuffing with apples to
produce a new flavor. Our beautiful Annapolis Valley is famous for
apples. In the fall, as we are working on harvesting and drying
savory, our neighbors are busily picking apples all around us. The
cool nights produce rosy red apples and makes them work harder as
they fear the coming winter will damage the crop. Traditionally, the abundant apple crop is put to use as an ingredient
in many foods including stuffings, pies, breads and sausages.
The combination of the two flavors produces a stuffing mix that
tastes great with chicken, turkey and pork.
Bread
Stuffing Instructions: Prepare Bread: Cut 1/2 loaf of bread
into cubes. Allow to dry 1/2 day. Combine Spice Mixture, 2 Tblsp
(50ml) Butter, and 3/4 to 7/8 Cup (170 ml - 200 ml) Water. Microwave
on high for 2 minutes. Mix with prepared bread. Stuff into chicken
or turkey and cook.
Potato
Stuffing Instructions: Prepare Potato: Boil and mash 1 lb (454g)
potatoes (about 4 medium potatoes). Combine Spice Mixture, 2 Tblsp
(50ml) Butter, and 3/4 to 7/8 Cup (170 ml - 200 ml) Water. Microwave
on high for 2 minutes. Mix with mashed potato. Stuff into chicken
or turkey and cook.
Yield: 1 pkg for 5-6 lb (2.5-2.7kg) chicken , 2 pkg for 10-12 lb (4.55.5kg)
chicken.
Ingredients: Freeze Dried Apple, Dehydrated Onion, Chicken
Broth, Salt , Savory, Pepper, Celery Seed, Nutmeg.
