My happiest moments farming are during harvest. In the middle of August our savory begins to flower, with tiny pale blue flowers which seem to attract every bee in the valley. The field comes alive with the sound of their buzz. As the savory is harvested, using a machine my father invented and built I enjoy seeing the rich red soil reappear as our wagons strain under the heavy weight of freshly harvested savory. The aroma of savory in the field is so strong that even my accustomed nose takes notice. The occasional bee sting seems a small price to pay for being there. Later in the fall when the harvest, drying and cleaning are done there is the reward of our richly flavored savory. Traditionally it is used in turkey and chicken stuffing for Thanksgiving and Christmas in Nova Scotia. I hope that you enjoy our stuffing mix as much as we enjoy creating it.
